Acacia Gum
Gum Arabic, also known as Acacia Gum, is a natural gum produced from the sap of the acacia tree.

Gum Arabic is used primarily in the food industry as a stabilizer, emulsifier and thickening agent in icing, fillings, chewing gum and other confectionery treats.

Gum Arabic is also a key ingredient in traditional lithography and is used in printing, paint production, glue, cosmetics, pottery and various industrial applications, including viscosity control in inks and in textile industries.

Acesulfame K
Acesulfame K is a calorie-free sugar substitute (artificial sweetener), also known as Acesulfame Potassium, and is 200 times sweeter than sucrose (table sugar) with a slightly bitter aftertaste, especially at high concentrations.

Unlike other artificial sweeteners such as aspartame, Acesulfame K is stable under heat, allowing it to be used as a food additive in baking, or in products that require a long shelf life.

When used in soft drinks, it is often blended with other sugar substitutes, especially aspartame and Sucralose. Combining these different artificial sweeteners can help to mask the bitter aftertaste, and create the sensation of even greater sweetness.

It can also be used as a sweetener in health / protein shakes and pharmaceutical products, where it can make some of the active ingredients taste more palatable.

Acetic Acid
Acetic Acid is an organic compound with the chemical formula CH3COOH. It is a colourless liquid that when undiluted is also called glacial acetic acid. Acetic acid is the main component of vinegar, and has a distinctive sour taste and pungent smell.

In food preparation, Acetic Acid can be used as a flavoring, and also as a food preservative. The acid inhibits bacterial growth, keeping food safe from contamination.

Industrially, acetic acid is used in a wide range of processes, including as a weak acid, a solvent, a reagent, a catalyst, and a pesticide, and can be used in the preparation of paints, varnishes and glazes.

Adipic Acid
Adipic Acid is an organic compound with chemical formula (CH2)4(COOH)2. It is produced from a mixture of cyclohexanol and cyclohexanone, and is a precursor for the production of nylon.

Adipic acid is also used as a food ingredient as a flavorant and gelling aid and in some calcium carbonate antacids to make them tart.

Ammonium Bicarbonate is an inorganic compound which chemically speaking is the bicarbonate salt of ammonium, and is also known as Hartshorn or Bakers Ammonia.

Ascorbic acid is a naturally occurring organic compound with antioxidant properties and is a form of vitamin C.

It is widely used in the food industry, as an antioxidant in the brewing, wine and cider industries, as a preservative in the meat industry where it helps maintain colour, as an improving agent in the baking industry and also for inhibiting discolouration in cut fruits, fruit pulp and fruit juices.

Baking Powder
Baking powder is a blend of acid and alkali ingredients which produce a chemical reaction after adding water. Baking Powder is generally used for increasing the volume and lightening the texture of baked goods. Baking powder works by releasing CO2 into the batter or dough, thus causing bubbles in the wet mixture to expand and thus leavening the mixture.

Caffeine Anhydrous
Caffeine (also known as Guaranine, Mateine or Theine depending on the source) is a bitter, white crystalline xanthine alkaloid and a stimulant drug found in varying quantities in the seeds, leaves, and fruit of some plants. It is most commonly consumed by humans in infusions extracted from the seed of the coffee plant and the leaves of the tea bush, as well as from various foods and drinks containing products derived from the kola nut.

Cream of Tartar
Cream of tartar is the common name for potassium hydrogen tartrate and is essentially an acidic salt. It is manufactured by mixing potassium hydroxide with tartaric acid.

In food it is widely used for stabilizing egg whites and whipped cream, preventing sugar syrups from crystallising, reducing discoloration of boiled vegetables and is also used as a component of baking powder, and sodium free salt substitutes.

Cream of tartar is also used in household products, such as brass and copper cleaners and bath / sink stain removers.

Fructose
Fructose is a simple sugar that occurs naturally in fruits, plants and vegetables. It is a natural sweetener, and is widely used as a substitute for table sugar / sucrose.

Uses of fructose include shelf-stable foods, fruit juice, energy-reduced products, cookies and cakes, flavoured water, sports and energy drinks, low calorie products, chocolate milk, carbonated beverages, breakfast cereals, confectionery and yoghurt.

Glycerine
Glycerine / Glycerol is a simple sugar alcohol used as an ingredient, sweetening agent, pharmaceutical agent, emollient and solvent. It is a colourless, odourless, clear, sweet-tasting viscous liquid.

There are many uses for glycerine; including in food as an emulsifier and stabilizer in baked goods and ice creams, in pharmaceutical applications such as cough medicines, skin lotions, mouth washes and suppositories, and in industrial applications it is used as the basic ingredient in gums and resins that are mixed into protective coatings like automotive and house paints.

Malic Acid
Malic acid is a dicarboxylic acid found in many sour or tart-tasting foods.The most common source of this compound is unripe fruit, and it is used widely as a food additive.

The most common use of malic acid in food products, is in soft drinks, cider, confectionery and potato crisps . Sour sweets often use malic acid rather than citric acid, as the sourness is more intense. Salt and vinegar flavored potato crisps also use it to produce a tart, vinegar-like flavor. In soft drinks and Cider it helps to improve the flavour and balance the sweetness.

Maltodextrin

Maltodextrin is a starch-derived food additive that is commonly used as a thickening or filling agent in a range of commercial foods and beverages. It is nearly tasteless but is often described as being slightly sweet.

Potassium Chloride
Potassium chloride is a naturally occurring compound made up of potassium and chlorine, and has the chemical formula KCl.

Used for the manufacture of dietetic salts, as a salt substitute and also for production of other potassium compounds for human consumption.

Industrially the majority of the potassium chloride produced is used for making fertilizer, though it is also used in medicine and for scientific applications.

Potassium Sorbate
Potassium sorbate is the potassium salt of sorbic acid. Its primary use is as a food preservative (E number 202), it is effective in a variety of applications including food, wine, and personal care.

Potassium sorbate is used to inhibit molds and yeasts in many foods, such as cheese, wine, yogurt, dried meats, apple cider and baked goods. It can also be found in the ingredients list of many dried fruit products. In addition, herbal dietary supplement products generally contain potassium sorbate, which acts to prevent mold and microbes and to increase shelf life.

It is also used in many personal care products to inhibit the development of microorganisms for shelf stability. Some manufacturers are using this preservative as a replacement for parabens.Also known as “wine stabilizer”, potassium sorbate produces sorbic acid when added to wine. It serves two purposes. When active fermentation has ceased and the wine is racked for the final time after clearing, potassium sorbate will render any surviving yeast incapable of multiplying.

Yeast living at that moment can continue fermenting any residual sugar into CO2 and alcohol, but when they die no new yeast will be present to cause future fermentation. When a wine is sweetened before bottling, potassium sorbate is used to prevent refermentation when used in conjunction with potassium metabisulfite. It is primarily used with sweet wines, sparkling wines, and some hard ciders but may be added to table wines which exhibit difficulty in maintaining clarity after fining.

Sodium Benzoate
Sodium benzoate is a preservative. It is widely used as a food additive, and has the E number E211.

Some common food uses are in acidic foods such as salad dressings (vinegar), carbonated drinks (carbonic acid), jams and fruit juices (citric acid), pickles (vinegar), and condiments.

Sodium bicarbonate, also referred to as “baking soda” is primarily used in baking, as a leavening agent. It reacts with acidic components in batters, releasing carbon dioxide, which causes expansion of the batter and forms the characteristic texture and grain in pancakes, cakes, quick breads, soda bread, and other baked and fried foods. Many forms of baking powder contain sodium bicarbonate combined with various phosphates and cream of tartar.

Tartaric acid occurs naturally in many plants, particularly grapes, bananas, and tamarinds, is commonly combined with baking soda to function as a leavening agent in recipes, and is one of the main acids found in wine. Tripotassium Citrate
Tripotassium citrate is the common tribasic potassium salt of citric acid, also known as potassium citrate. It is produced by complete neutralization of citric acid with a high purity potassium source and subsequent crystallisation.

Tripotassium citrate is used in foods, beverages, and technical applications as buffering, sequestering or emulsifying agent. It usually replaces trisodium citrate whenever a low sodium content is desired. In pharmaceuticals it is used as potassium source and as active ingredient to treat urinary duct stones. When added to oral care products, tripotassium citrate is the active ingredient to reduce the sensitivity of the teeth. E number: E332

Xanthan Gum
Xanthan gum is a polysaccharide that’s commonly used as a food additive. The name is derived from the strain of bacteria used during the fermentation process that is used to make it, Xanthomonas campestris. Xanthan gum is a unique hydrocolloid with exceptional rheological behaviour, it is a creamy white powder that dissolves readily in hot or cold water to form highly viscous, colloidal solutions, suspensions or gels at low concentrations.

In foods, xanthan gum is most often found in salad dressings and sauces. It helps to prevent oil separation by stabilizing the emulsion, although it is not an emulsifier. Xanthan gum also helps suspend solid particles, such as spices. Also used in frozen foods and beverages, xanthan gum helps create the pleasant texture in many ice creams, along with guar gum and locust bean gum. Toothpaste often contains xanthan gum, wherein it serves as a binder to keep the product uniform. Xanthan gum also helps thicken commercial egg substitutes made from egg whites, to replace the fat and emulsifiers found in yolks. It is also a preferred method of thickening liquids for those with swallowing disorders, since it does not change the color or flavor of foods or beverages at typical use levels.

Xanthan gum is also used in gluten-free baking. Since the gluten found in wheat must be omitted, xanthan gum is used to give the dough or batter a “stickiness” that would otherwise be achieved with the gluten.

In the oil industry, xanthan gum is used in large quantities, usually to thicken drilling mud and in cosmetics, xanthan gum is used to prepare water gels, usually in conjunction with bentonite clays and has some skin hydrating properties.
